Benefits of Parsnips
Autumn season brings quite a few options for our seasonal fruits and vegetables. Here are the benefits of one of the most misunderstood vegetables.
Not many people know that much about parsnips. Someone said that they look like the Mandrake root from Harry Potter but without the face. An obviously the noise. But there are a lot of health benefits from eating parsnips and they actually add a great earthy flavor to dishes for a homey and soothing quality. When cooking parsnips, they will smell sweet and earthy. Cleansing the air and making the house smell good and inviting. Clearly, this is a great fall root vegetable for your kitchen for the coming holidays.
Benefits can range from:
High nutritional value containing vitamin C, vitamin K, folate, and many B vitamins. They also contain essential minerals like potassium and magnesium.
High in fiber helps digestion, maintaining weight and lowering cholesterol.
Antioxidants which help reduce stress and inflammation
Very little calories
Helps reduce blood sugar levels
Improves heart health due to the potassium by reducing blood pressure
High in vitamin C to boost in the immune system and reduce your potential cold and flu season
Cooking
This root vegetable can be roasted, mashed, pureed or just added to soups and stews. One of my favorite soups is an apple and parsnip soup. It’s a warm apple scented soup and flavor with a bit of a back of the throat kick making the soup a great comfort food. I pair it with a great grilled ham and cheese. At our house we make it with a white cheddar like Dubliner’s Cheddar. My kids love it!
Aromatherapy
This isn’t a big aromatherapy item like herbs and spices would be. As there is not a big aromatic property to the vegetable. However, it does work quite well with earthy scents to increase the homey, soothing, grounding and calming atmosphere in the space or home.
Not many chain grocery stores carry parsnips. I couldn’t find it at Safeway, Albertson’s or the like. But Whole Foods and other more holistic type grocers do carry this fantastic little vegetable that might benefits you and your family from giving it a try.
